Protein packed navy bean salad recipe

Being a vegetarian - do you struggle sometimes with ideas for meals with high proteins content? This recipe can be one of your options, especially if you are of the active type - this bean salad is packed with proteins, fiber and minerals, which makes it a great alternative to meat. It’s also very easy to prepare and very nutritious due to B vitamins, folate, magnesium and other minerals content.

Ingredients:

  • 2 cups navy beans 
  • 4 celery stalks 
  • ⅔ cup olive oil
  • 6 tablespoons white wine vinegar
  • 1 tablespoon chopped thyme
  • ½ cup greek feta
  • salt, freshly ground black pepper

Instructions:

Thinly slice the celery stalks and combine them with beans, oil, vinegar, and half tablespoon thyme in a large bowl. Toss all together and season with salt to your liking - remember that the greek feta is also quite salty.

Transfer the salad to a plate or a shallow bowl and top with greek feta, pepper and remaining thyme.
