Vitamin B rich red cabbage side dish

Red cabbage is a perfect dish companion. Low in calories, purple cabbage contains an impressive amount of nutrients. It’s a great source of vitamin A, C, B6, K, thiamin, riboflavin, potassium, zinc… We could go on and on! Add onion to it and you have a perfect recipe for natural, anti-inflammatory side dish!

Ingredients:

  • 12g butter
  • 1 red cabbage
  • half red onion
  • 2 sweet apples
  • 6 allspice berries, lightly crushed, wrapped in cheesecloth and tied
  • salt and black pepper
  • 85ml red wine
  • 85ml red wine vinegar
  • 65ml molasses or cane syrup

Instructions:

Cut the cabbage to 0,5 cm slices, thinly slice the apples and onion.

Melt the butter in a deep pan with a cover. Once it has melted add the cabbage and stir well.

Add salt and pepper, the red onion, apples and allspice packet. Cover the pan and heat it over medium heat, turning once in a while, until the cabbage is soft, but still slightly firm, about 15 minutes.

Remove the lid and add red wine. Raise the heat and cook, uncovered, until the wine is reduced by half. Add the red wine vinegar and reduce a little, then add the molasses or cane syrup and mix well.

Cook 2 to 3 more minutes, remove the allspice packet and season with salt and pepper, to taste, if required.
