Kale guacamole
Have you ever met a person who doesn’t like guacamole? Yes, neither did we. This delicious dip is perfect as it is, but we discovered that if you add curly kale to it, it’s not only fresher and greener, but also extremely nutritious. Kale is very rich in vitamins: A, K, C and B complex, particularly vitamin B6. It’s known to be the most nutrient-dense foods in existence! So why not having it in your guacamole? Below you’ll find the list of ingredients. You can adjust the recipe to your liking. We believe there is never too much of coriander and lime juice in guacamole, so we don’t limit ourselves here. Plus coriander is a source of dietary fiber, manganese, iron, magnesium and its leaves are rich in Vitamin C, Vitamin K and protein, which we find pretty awesome too.
Ingredients:
- 4 big leaves of curly kale
- 4 medium ripe avocados
- lime juice squeezed from 2 limes
- ¾ teaspoon salt
- ⅓ cup chopped red onion
- ½ - 1 cup chopped fresh coriander
- 1 small chopped jalapeño, seeds and membranes removed

It’s better to enjoy the kale guacamole right after mixing, when its colour and flavour are the freshest and the nutrition values the highest. So please do!
