Jerusalem artichoke crisps

It’s time to welcome Jerusalem artichokes in your kitchen. They’re known to be one of the most healthy veggies. Their nutrition benefits are countless, but they are particularly rich in minerals and electrolytes, especially potassium, iron, and copper. They are also quite easy to prepare. This recipe is very simple and can be a great alternative to regular crisps to accompany your movie night or a nice healthy snack to take with you to work, school or uni.

Ingredients:

  • 2 Jerusalem artichokes
  • sea salt flakes

Instructions:

Preheat the oven to 190°C.

Clean the dirt off the Jerusalem artichokes by holding it under running water and scrubbing it gently with a brush - you don’t want to remove the skin.

Dry the cleaned artichokes with paper towels.

Cut the Jerusalem artichoke in very thin slices - the thinner you cut them the better.

Spread out the slices on a baking tray lined with parchment paper, in one layer leaving some space between them - to enable them getting crispy.

Sprinkle with sea salt.

Bake for 15-20 minutes.

Take out from the oven and leave to cool for 10 minutes.
