Green shakshuka

If you are looking for a nice change to your regular breakfast menu - you’re truly lucky to be here. We have a very green breakfast option - green shakshouka - perfect to boost your immune system and supplement essential minerals and vitamins thanks to its ingredients combination. There is kale, which contains antioxidants, wealth of minerals and omega-3 fatty acid called alpha linolenic-acid. There is iron, folic acid and vitamin A rich spinach, vitamin C rich parsley and of course eggs, which contain a little bit of almost every nutrient you need. All these nutritional benefits make this dish a must try for breakfast!

Ingredients:

  • 1 zucchini
  • 2 cups shredded kale
  • 2 cups trimmed spinach
  • 1 sliced onion
  • 1 tablespoon lemon juice (from one lemon)
  • 60g feta
  • 30g pitted black olives
  • 8 eggs
  • 1 cup parsley leaves
  • 250 ml olive oil
  • 5 garlic cloves

Instructions:

Place parsley, olive oil and garlic cloves in a dish and blend until smooth.

Heat 1/4 cup of the parsley oil mixture in a large frypan over medium heat. Add sliced onion and cook until soft, stirring occasionally until soft.

Add fennel seeds and coriander, and cook for 3 minutes.

Now add zucchini, kale and spinach and cook only until you notice they're starting to wilt.

Chop the olives and add them to the pan, along with lemon juice and stir to combine.

Make 8 small indents in the mixture and crack an egg into each of them, crumble feta on top. Cover the pan with a lid and cook for 2 minutes or more depending on how you like your eggs to be cooked.

This dish tastes and looks perfect when served with toasted rye bread and garnished with some extra herbs. Enjoy your yummy filling breakfast and a have a marvelous day!
